There are topping sauces including a gold topping sauce which looks spectacular on desserts and for that special occasion.
A huge range of chocolate cups, dessert cases and tartlets in which to put your desserts including tuille baskets and mini sweet tartlets, saverins, profiteroles, éclairs & choux buns together with meringues and sponges top up this section.
Compounds, bake and freeze stable with 10 stocked but another 40 available to order, do not hesitate to ask. Food colourings, extracts, aromes and nearly twenty different flavour drops ensure that whatever the taste you need, it is available.
Dessert preparations, glazes for all patisserie usage and a full range of gelatines, together with over a dozen different syrups for every use are also listed together with crème anglais, chocolate sauce and patisserie ingredients such as citric acid, pectin and glycerine.
Vanilla is still the most popular flavour by far in the UK and is well represented with both Ugandan and Bourbon pods available. Three different types of vanilla extract to suit your preference, vanilla paste, seeds and even vanilla salt are stocked.
Local Wye Valley honey available in squeezy bottles is favourite in the honey section in that it does not crystallize and we also have a range of fruit and chocolate glazes to decorate your finished desserts.
Other favourites are the drizzle/ garnishing glazes which come in a handy 250ml squeezy bottle, excellent value, and are ideal for decorating plates and desserts to a professional standard.
Although we only list about fifty different couvertures in both block and callet form and from 70% cocoa extra bitter, through to single variety caoba from Venezuela, we can supply to order nearly 200 other couvertures from Swiss, Belgian and French manufacturers including Valrhona - please don't hesitate to give us your requirements.
We also supply chocolate decorations, panatellas, chocolate flowers, ready made cups in which to put your own fillings, the fillings themselves, such as champagne genache, the cocoa powder in which to dust them and even the paper cases in which to serve them!!
Silver leaf, gold leaf, crystallised flower and all the products you need to enrobe are listed, or you can use the mini marshmallows or Griottine cherries for your chocolate fountain - Specially formulated chocolate for that purpose is also at hand!
A wide range of alcohols are available and they do not attract excise duty so are very cost effective, supplied in unbreakable plastic bottles. Eau de Vie such as pear William, liqueurs such as cherry brandy and spirits like calvados and pastis are all available as are recipes and sample packs - please do not hesitate to ask.
